Since fruit and most vegetables have their own natural complexity of sugars, these naturally complex flavors play out wonderfully in these recipes. White sugar, corn syrup and chemical substitutes are neither natural nor simple sugars and therefore they tend to compete and/or mask these flavors and natural sugars. Honey, agave syrup, and maple syrup are natural and mostly simple sugars which tend to enhance (not compete nor mask) these natural flavors.

The book trumpets "no sugar" or corn syrup or artificial sweeteners. It also admits that fruit and most vegetables have their own natural sugars. But the recipes require honey or syrups. Somehow, I missed the supposed logic of this.
